Since 1789, Kamada Soy Sauce Inc. has been making soy sauce in Sakaide (Kagawa prefecture, Japan), a salt-producing region. Since its inception over 230 years ago, Kamada Soy Sauce has been dedicated to providing the greatest quality Dashi Soy Sauce. We have also won public trust through assisting the community in a variety of ways. We have always been quick to respond to changes in the food culture, and our team has consistently delivered the high-quality items that the times demanded.
Commitment to Safety and HACCP Activities
On February 7, 2008, our Minato Plant in Sakaide, which predominantly makes carton-packaged products, received HACCP accreditation- an audit by the Japan Fisheries Association- ensuring product safety. We verify that there are no quality issues and maintain track of each step of the manufacturing process, from the acceptance of raw materials to the final product delivery. If any aberrant products are discovered, they must be eliminated from the process immediately. Traceability is also maintained by documents that enable us to identify the raw ingredients and finished goods delivered to clients. Traceability drills are conducted on a regular basis to ensure that relevant documents are recovered swiftly and accurately. Every person who enters the processing area is also recorded from the standpoint of food defence readiness. This is true not only for employees, but also for visitors, such as engineers who do maintenance and repairs on machines. (Food defence refers to steps taken to avoid food contamination.)
Quality Assurance
Since March 21, 2012, Kamada Soy Sauce Inc. has conducted voluntary radiation inspections. The radiation detector is a model (NaI(Tl) scintillation detector) that meets the performance requirements outlined in the Japanese Ministry of Health, Labour and Welfare (MHLW) Method for Testing Radioactive Cesium in Food. An examiner who has passed the approved radiation measurement proficiency examination does the measurements. (The instrument also complies with the new general food standards, which went into effect on April 1, 2012.)
Before being put into the carton, the liquid end-product is additionally inspected by production lot. Advanced test is carried out by an external inspecting body employing a germanium (Ge) semiconductor detector if questions emerge during the examination utilising the aforementioned scintillation detector.
